A Culinary Homecoming: A Sault Chef's Spanish Love Letter

Imagine this: a chef, trained in the vibrant kitchens of Spain, returning to his roots to share the flavors of Madrid with his hometown. That's precisely what Nash Hall, a Sault native, is doing in mid-January, and it's a story that's as heartwarming as it is delicious.

Nash Hall is set to bring a taste of Spain to OutSpoken Brewing, offering a special five-course tasting menu of Spanish gourmet food. This event is a true homecoming, a chance for Hall to reconnect with the community that shaped him. The event will take place over two evenings, with four separate sittings, from 5 p.m. to 7 p.m. and 7:30 p.m. to 9:30 p.m. on Thursday, Jan. 15 and Friday, Jan. 16.

"This is my love letter to my hometown," Hall shared, emphasizing the deep connection between his culinary journey and his roots. He sees each dish as a celebration of growth, gratitude, and the joy of sharing food with those who inspired him.

The menu promises a delightful array of Spanish delicacies, including blistered pepperoncini with garlic sauce, thinly sliced fish, oxtail, octopus, and a dessert featuring a Spanish olive oil cake with a Canadian maple twist.

Hall's passion for food began in his childhood, crediting his family for instilling in him a love for good food. He fondly recalls cooking with his mother and the cherished memories of family dinners filled with laughter and love.

After graduating high school, Hall initially pursued psychology at the University of Ottawa before discovering his true calling at Le Cordon Bleu Ottawa Culinary Arts Institute. This led him to a career in kitchens, starting at age 18 as a sauté cook. He worked at restaurants such as Riviera Ottawa and Harmons Steakhouse, and at Fairmont Banff Springs in Alberta. He then honed his skills further at Le Cordon Bleu in Madrid, where he was exposed to French classical cuisine with Spanish influences.

For Hall, being a chef is more than just a job; it's an identity. It's a way to express creativity and show care for others.

But here's where it gets controversial... Hall finds purpose in creating something new in the kitchen every day and feeding people, believing that cooking is one of the most direct ways to show care and make people feel special. He enjoys being part of a team and constantly expanding his knowledge and skills.

Hall views being a chef as a way of expressing love and style through food, something people often take for granted. He believes there's something special about bringing loved ones together for a meal.

And this is the part most people miss... Hall is open to returning to the Sault one day, perhaps to open his own restaurant.
